Hello Im thinking of buying an hdmi encoder to get this to work but I would like to know, with an HDMI encoder am I able to watch any channel coming from a subscription like say hulu, or only the channel currently playing on that particular subscription or service? Thanks

If you get an encoder with only one HDMI input, you will be indeed stuck to the channel currently playing. The encoder will process whatever is coming in on that one input. So if you change the channel, you will see the change on the recording.
An encoder with multiple inputs will enable you to watch another channel from one of the other inputs.
but will I be able to change the channel from the channelsdvr app or would i need to change it from some other device or medium, because ideally my dream would be able to tune to any provider from the channelsdvr app, thanks in advance!
The answer to your basic question is YES this all works, recording HULU, etc..
I'm going to give you an overview of the technology used for HDMI recording and point you to the thread that you need to read to get started:
- You need an Android TV (chrome cast type) HDMI Dongle
- You need an HDMI Encoder (plug your Android TV device into this)
- You need a way to configure all of that in channels so that channels can use 'guide' data to 'tune' your Android TV and record from the HDMI.
Step 3 sounds the craziest, which is why the ADBTuner
Docker container was created. It acts as a middleman between your Android TV tuner -> HDMI Encoder -> Channels. You can learn how to set all that up in the thread I linked to above, I won't go into that here.
I highly recommend that you post follow up questions to that thread.

I have three ONN Android devices and the 4 port URayCoder HDMI -> IP encoder. I cannot vouch for the 1 port, but it seems like a 1 port version of the 4 port.

It depends what is your Provider if it is XFINITY you be best to go with the FireStick as it supports XFINITY Stream ... If not the onn will do.

I believe that NONE of the encoders as far as I know will encode more than stereo...so even if it is coming into the encoder as 5.1 it is leaving the encoder down coded to stereo.
That is correct, doesn't matter what the box/app provides the HDMI encoder will only output stereo.
HDMI encoders are unfortunately kind of the wild west when it comes to quality, you might have to go through multiple different boxes to find one you like. I've seen all sorts of A/V sync issues, black level issues and stability issues on the boxes that I've tried. Right now I have a uRaycoder, TBS2603SE, and an iSeevy. The first two are rock solid, the last has a random reliability issue that I just live with (I monitor it daily with test recordings and reboot it on the random occasion where it craps the bed). I have all three scheduled to reboot daily overnight btw. Lots of folks recommend the linkPi ENC1 but I had black level issues with it.
Avoid the cheap exvist boxes on Amazon.

Fyi i had hulu and the quality was horrible. I didnt know how bad it was because i just used it for TVE access. When i setup adbtuner with he hdmi encoder i thought that the encoder was trash. Turns oit hulu was trash. Switched to YTTV and the picture quality improved aboit 1000%
what about directv?
I can help you with that. All I can say is YTTV and adbtuner are a really good match. Picture quality is stellar. I wouldnt use hulu if they gave it to me for free

From the above list, I believe only Philo and Sling work with ADBTuner.
I personally use DirecTV with ah4c, and Spectrum is also possible -- but ah4c in general is more for advanced users, and it's helpful to be familiar with Bash scripting.
