I'm currently running the Beta software on my Windows server, and at this moment the server webUI states that it is waiting to upgrade to 2020.05.25.2131. I did not request this update. Is the software automatically upgrading itself now?

Iām not sure what you mean by exceeded, but it updates to the new stable build when it is released.
Our beta and stable builds come from the same code. When we believe we have enough new fixes and improvements we mark a build as stable and all DVRs upgrade to it.
Mildly confusing, but okay. I'd prefer that the server does not auto update in any case. Is there a way I can stop the auto update feature?
No, when a new stable release is published all DVRs are updated to it. Relying on users to keep their software up-to-date has been found to not be an effective strategy in the technology industry.
