Since I can’t figure out how to do a manual channel+date+time based recording, the only other thing I could think of is if the Channels DVR guide shows the episode timeslot as "To Be Announced’ and I queue that to record, will it record or will futute guide updates cause it to not record that timeslot if the title changes from “To Be Announced”?
If you click a specific timeslot on the guide and select Record, it will setup a job for that specific channel/time/duration and will record it no matter what happens with the guide data.

I think I see that in the schedule json data “Serial: 0” so it won’t delete it as stale/expired?
Curious, who sets the value Serial and what is it used for?
Correct. The serial is a version number used to detect guide data changes. When a scheduled job is created by a series pass, the version number of that guide data is stored and used to detect if the show has moved to a different timeslot or has been removed from the guide.
