Sometimes virtual channels are missing a "watch" button in the browser... any ideas? They play fine on iOS and ATV

No. Watching Virtual Channels is a client only feature due to how they work. This isn't something that is going to change.
If you are on a newer Mac you can install the channels app on your computer
