In Advanced Settings for each source there is an option stating “Channel Logo’s Only”. I had assumed that this would alter the guide so I only see the logo’s and not the channel number but it doesn’t seem to do anything… what is the expected behaviour of this option?

No. And I'll add that I initially thought / hoped the same! (I don't need to see channel numbers anymore, for me, they just clutter up the guide.)
But what that setting actually does is, change the display of the tiles in "On Now." It removes the artwork for what's playing now, and instead just shows logos for that source's channels instead. I'm not sure who'd want that, or why... but it is what it is.
