Think I've created a Collection.
When choosing "Clients" > Global > Server Side > then select newly created Collection; there is no item to click; ie Start/Next/Go/Make it Happen.
Suppose I do not know exactly what to do to set that change in motion.

Are you talking about Channel Collections?
Once you’ve created them you can choose which ones to include on the clients.
That pop-up list has two sections, “selected” and “available.” Just click one in the “available” section of the list. . That moves the Channel Collection to the “selected” section. And selecting one of them there puts it back into “available.” Choose the Channel Collections in the order you want them to be displayed. That’s it…. I hope this helps! Sounds like you're at the finish line! Nice job getting it all set up.

I've been able to add a Collection. I would like to add another, but don't want the current one to "disappear". When going to "Clients", there is a pull-down menu on the right side of the screen, which one of those do I choose to ensure the original collection is kept, and just adds the new one?

Multiple Channel Collections can be added. Each one you chose is added. They are added in the order you pick them.
The drop-down list collections in 2 sections. The first is not included, and the second is the collections you have included.
