I'm considering moving my current win 10 setup to a mac mini. I have 3 or 4 additional storage paths now.
Does the backup include those paths and the data files? Or do those drives need to be setup manually on the new device?
Is it possible to combine the files in the multiple small drives into one large file?

I believe so, and I believe they are referenced as absolute paths. So, immediately after migration you ought to change them to point to their new location.
Do you mean one large drive? If so, then yes. Storage paths are merely a way of telling Channels that if it can't find it in its main location, check these other places next.
Depends on how they were formatted. If they are using ExFAT, then yes. If they are NTFS, maybe. (Do a search for "mac" and "ntfs", and you'll get results for third-party tools, as well as some methods to get native support through some workarounds. I know the Paragon software is solid, but I can't personally speak to the others. There was also ntfs-3g via MacFUSE, but I am not sure if that is still supported.)
Thank you. You've given me some more research to do. All the drives are formatted NTFS. So I'll look into Paragon.
As far as the drives go, I currently have a D:\DVR, E:\DVR, F:\DVR etc and I just wondered if there was a way to merge the folders and files on E and F into the D:\DVR. The thought here is just to minimize the external hardware. The D drive could hold everything.
