I realize there's a lot of factors at play here but is there a general rule for how many hours of content that can be stored on the DVR - for example x hours of HD content and x of SD?

Yah, it really depends on what bitrate your sources are and the size of your storage media.
If you recorded anything with Channels DVR you can view the bitrate and size of the recordings to get an idea. Bring up the recording Options > View Details
