They just showed off their 1.0 launch revel and its looking nice.
hows the stability of Channels in Docker? Looks like Portainer could manage it.
Can only comment on Umbrel but not running channels on it. I've been running Umbrel for a few years. Bitcoin node and Pi-Hole running on a Pi 3 - no issues, rock solid. Yes, the new UI is nice and the app store is growing.

If it's a Linux distro, then it shouldn't be difficult to run Channels on it via docker/Portainer or podman
Just did this with v1.3.
Took the existing pi5, put a 2TB storage in it, threw on Ubuntu booting off SD card, downloaded and wrote the umbrelOS image to the 2TB. Booted without SD card to UmbrelOS and set up admin account. Installed portainer.io from the App Store and created new container for channels-dvr. Seems to work well. I changed the network to host to just let it be accessible on the local network.
Would be super nice if Channels would just add the app to the Umbrel App Store. It looks pretty straightforward to do that.
