Cant find any documentation on what this folder actually does - I am assuming obviously something relating to the recorder, but what specifically?
Currently this folder is almost nearing 1TB which I assume must be some kind of leak / bug
Is it safe to delete this folder?

Try "Refresh Search Index" under maintenance and see what the new size is

Is there any way to set this on schedule to avoid this happening in the future?
If it happens again let us know. There was probably something weird going on with your permissions causing deletes to fail.
