I really like the Channels interface, storing the files locally, and commercial removal...
but at this point with more and more TVE channels being cut and the overall cost of FUBO/YTTV/Hulu and the fact that I can get decent deals on Peacock, Paramount+,etc. I'm considering just cancelling my "cable" and watching through those (OTA isn't reliable in my location). I assume there isn't a way to get content from those streaming apps into Channels other than as links?

I suppose I may have misread the intention of your post.
Do you wish to keep specifically the Channels interface to aggregate all of your media? If so, then yes, PlayOn Cloud will probably satisfy your needs (for an additional fee for each item you wish to add to your Channels library).
However, if you merely want a single app that can integrate the on-demand content from multiple streaming services, then something like ReelGood, JustWatch, or even the native TV app on the Apple TV might suit your needs.
It all depends upon what you actually want. However, Channels does not offer a way to ingest and present content from streaming services into its interface directly; there must exist some middleware to get it there. (Meaning, Channels cannot ask Hulu, Netflix, etc., for the streams and then show them in its own player.)
Do i need PlayOn Cloud or just the desktop version and then a way to get the recording over to my Channels server storage? (Currently I'm just running Channels on a RaspPi with a harddrive attached.)
I've heard people have had mixed results with PlayOn, but people have mostly had positive results?
PlayOn Cloud has an integration w/Channels DVR that downloads those recordings.
You can use it w/credits.
With PlayOn Desktop, you would have to import them manually.
