Can I simply delete old versions of the server, which is running on Ubuntu?
I'm a bit surprised that Channels puts the burden of disk maintenance on end users.
You can delete them or just wait for the dvr to do it by itself

How often are old versions removed? Is this a cron task or otherwise configurable?
6 updates are kept at all times. Any beyond that are cleaned up on upgrade.
