I've already logged in to my Spectrum app but

Could someone help me and tell me why I am not receiving all the channels on my Spectrum plan?

Two reasons:

  1. Not every channel offers a non-DRM feed of their content on their website, which is what Channels uses.
  2. Spectrum may not have an existing carriage/licensing agree with the network to offer TV Everywhere streaming in addition to its regular feeds.
