Hi - I have a headless Mac mini running my channels server, I just noticed that it's connected on wifi AND through the ethernet cable. Is there any potential issue with that? Should I just have it connecting 1 way instead of both?
Lan connection is always preferred...
Go into your WiFi settings and change the TCP/IP to off. This will allow you to continue to use AirDrop and some other Apple features, but everything will go through LAN. I've been running mine this way.

No issue whatsoever. In macOS System Settings -> Network, if Ethernet is at the top of the list, that's the prioritized network connection. If it's not, you can make it so via the "..." at the bottom right, choose "Set Service Order." Drag Ethernet to the top.
I've found that even with the Ethernet set to the first priority, there are times that important (high speed) connections end up happening over the WiFi. Doing the approach @scottuf suggested is what I do to prevent that from becoming an issue.
