Can I simply unplug the external hdd from my raspberry pi and connect to my computer set up?
Also is it possible to use both my external drive and my computer internal ssd for storage?

If your hard drive is formatted with NTFS or FAT partition, yes it can be reused and the content pointed to after you install Channels DVR on the computer. You can have multiple storage locations.
You will need to run a backup on your PI before moving. Follow the migration guide and it's easy
