8a78f11a-e5f7-4856-a7f3-d9c9b73ef8f4 submitted. Wondering if something is writing to the USB stick i have attached for ssh? I don't have (shell) access at the moment to the pi, but will look later on.
My USB drive is only 18% full - should have included that first

Use the Guide Maintenance > Delete and Recreate option.

Your system is running out of disk space due to all the docker stuff running. Docker is not a supported feature of the Pi image, so you're on your own if you decide to run Plex and other stuff on the same device.
You could SSH in and run this to see where all the space went:
du -cahd1 /mnt/data
