Whenever I pause live TV, it only pauses for 30 seconds or a minute and then automatically starts playing again. I have plenty of disk space to store hours of video. Is there a setting or something that I can change to change this behavior?
Is that disk space on your client device? (The pause buffer is by default on the client device; most streaming devices barely have enough disk space for their OS.)

As @racameron said. The client typically is the limiting factor here. The buffer for your live feed is stored locally on the client. The server is just directing that feed to the client.
If you want to provide detail on the client you are using we may be able to help more. I know some users are able to add storage to clients to solve this.
You can also move the buffer to the Server by changing Original Quality delivery from DIRECT to STREAM
Protip: Use Stream while at home to place the buffer on the server if your streaming device’s storage is preventing you from pausing for a long enough time.
