Last night I noticed that Monday Night Football (in my NFL Football pass) didn't seem to be recording (wasn't showing up in Recordings), though the DVR status page showed it as recording. I let it be and checked it on it today, and it still hadn't shown up in Recordings, though I can see the mpeg file in the expected location. I can also see log entries for the recording (and nothing that looks like an error, though I'm certainly not familiar with what's expected to be there or not). I wasn't even planning to watch that recording, so it's no big deal for this one recording, but it does leave me a little uneasy that this will happen in the future without me noticing, and I'll miss things I do want to record.

Check the Channels DVR web UI interface.
See if it's still showing in DVR > Schedules
See if it appears in DVR > Manage > Shows
When you mention looking for it in DVR > Schedule, that's just for future airings, right? Next Monday's instance of Monday Night Football is NOT appearing in DVR > Schedule, but from looking at the guide, I guess that's expected. There are plenty of other NFL Football recordings scheduled, though.
Monday's recording also doesn't appear in DVR > Manage > Shows.
I mentioned DVR > Schedule because sometimes a recording doesn't get marked as finished and still appears in Scheduled after it's done.
I can see Carolina Panthers at San Francisco 49ers next Monday Night.
If you can't see it in Recordings (DVR > Manage > Shows), it must have been Trashed. See if it's in Library > Trash, search the DVR log for NFL Football Dallas Cowboys at Las Veg to see what happened to it after it recorded.
Huh. Sure enough, I do see a log entry from last night logging its deletion (with "(user)" presumably claiming I did that, though I certainly didn't, because as previously mentioned, it never showed up in Recordings at all.
