This is not currently possible, but something we plan to add.

Yes you can use AirPlay from Safari if you’re playing back on the DVR web UI.

I use my MacMini and port forwarding to watch TV remotely. You do need decent upload and download speeds.
I think op is asking about taking the ATV to a hotel and setting it to connect to the home-based DVR server.
But, yes, a fallback is to airplay to the ATV from the web-ui on an iPhone (which can play from a remote DVR server).
I would like to add that, interestingly enough, if implemented smartly, executed seamlessly, and marketed from a slightly different angle, a remote access feature baked into the Apple TV app could effectively be a viable course of action toward at least partially ameliorating Channels’ lack of a DTCP-IP license and its resulting lack of support for streaming DRM/CCI-encumbered channels.
I’d venture that many, if not most, people have a willing friend or relative in a region serviced by a different provider that might be a bit more consumer-friendly and not firebomb its entire lineup with DRM. The impediment would come down more to bandwidth on both sides (especially upload), than to access or feasibility. I know I wouldn’t have a problem with bandwidth, but many parts of the U.S. and the world still have absurdly slow "broad"band.
Regardless, I think a full-fledged remote access feature would be a really good solution to the absence of DRM support for a great many number of users, and the added feature would go a long way toward appeasing those who are currently very loudly clamoring for DRM support—especially if remote access were explicitly billed as a potential resolution (or creative workaround) for just this issue.
The problem is that this would be against the TOS of most cable providers if the original source was from cable.
Remote access for personal use (ie: by the original account holder) remotely is in they grey area of fair use. Remote access by friends (or family not living at the original source location) would upset the cable providers (and was one of their excuses for DRM in the first place).
Depending on where you are; there could also be some broadcast/FCC limitations as well (not sure)
Channels may not want to open that can of worms.
