Is there an easy way to make the docker RPi partition (the 8 GB mounted at /mnt/data) larger?
Also, while we're at it, is there a way to open port 22222 with built-in Tailscale, so Tailscale doesn't have to be run twice?

No there isn't. But you can install raspbian and do whatever you want.
