Can you have the server running on 2 different computers at the same time?
Yes, two or more servers can run on different computers without issue. You'll need to disable "Network Discovery" on the ones you don't want the clients to auto-connect.

The two can even run on the same computer, different ports or IPs and, obviously, different directories.
