Stream Stick/Box Where I can make Channels the Default Home Application

My 93 year old mother-in-law can't cope with technology. My sister-in-law and I have considered replacing her cable subscription with a Channels box. I would donate an old notebook to act as a server in her basement, attach an old hardrive, and add Jump Desktop to it. We would remotely select movies that she would be likely to like, her favorite tv shows from the various services, etc. My dream solution she would power-up her tv upstairs and it would come up with the Channels page of recordings. What I'm looking for is a streaming stick that I could hack to directly launch Channels without her having to sort through apps or anything. We would handle everything on the back end and it would just work. Any suggestions. We already have a Fire TV stick in her set so that would be ideal, but will happily buy something else. Getting summoned to her apartment because the "tv doesn't work" is getting frustrating and no we didn't cut the cord. She can't really even cope with cable. "It is just too complicated."

The closest thing I can think of is the TiVo Stream 4K. Although it is setup for TiVo, you can reprogram the remote to do completely different things. I'm not 100% sure, but I think you can redirect one of the buttons to go directly to a specific app. If this would help you should search for information on how to reprogram it.
