When I search for TV shows on the Channels app (Apple tv) to set up a pass for recording, none of the shows that I want to set up are there. How do I properly search for tv shows/series.

Only items that have an entry in the upcoming guide or in your library can be searched for. If a show has no airings within the next 2 weeks, it most likely will not show in search results.

You can add an Advanced Pass (from the DVR web UI) that matches Titles of Shows you want to record.
Using
Title CONTAINS Part_of_Show_Name
or
Title == Exact_Show_Name
