The last few betas when I delete a watched show that I got to from Up Next, it doesn't clear from the screen and is still clickable. Leaving Up Next and going back there it will be gone, so for the past few week something is causing it to not refresh like it used to. Diagnostics submitted from Apple TV
Is this on the Home tab or a custom Personal Section?
I am seeing this too. For me, it is just in the normal Up Next section it is not updating.
My Up Next in my personal section updates fine when i delete something. (Home is also updating fine)

I haven’t started using personal sections so it’s just the old up next for me as well.
Off topic, but seeing as how this works with personal sections, gave that a try. Wish I would've tried it sooner. Great feature.

Is this deleting it via the modal showing the episode, or deleting it via the contextual menu you get by clicking and holding on the content?
I don't use the contextual menus, just the modals. I'm using personal sections now and it doesn't seem to be an issue there.
