Currently, when I launch Channels on AppleTV, the Guide does not default to Favorites. Nor can I change the guide to show only Favorites.
The guide opens to the last collection you had showing. There’s no way to default it to a certain collection.
What do you mean that you can’t change it?

we have 3 Apple TVs. 2 are 4K, one is the last pre 4k. on the pre and one of the 4k's, in the guide, the display choices [HD, SD, favorites, sports et alia] are shown on the left. on the other 4K there's nothing.

You seem to have turned off the collections for guide. Visit Settings > General > Live TV > Guide Channel Collections to turn them back on.
