I run Channels on my Synology, multiple clients. At the risk of being flamed for simply asking, is there a solution to track what clients have watched? Something like statistics ran in conjunction with channels?

No, such a feature does not exist.
Theoretically you could craft a script that:
- Polls the server for clients connecting to it
- Checks the server's logs for each time a client requests a stream
- Aggregates the content into something useful
(Of course, this also requires that all of your clients use tuner sharing, otherwise live streams from HDHR tuners will bypass the server.)
