What determines Movie / TV Show distinction and can it be adjusted?

We are not Movie buffs in our house and primarily just use Channels to record and watch TV Shows.

However every so often something we record is categorised by the system as a Movie and therefore goes into the Movie folder rather than TV Shows. To us that effectively makes it "disappear" as I don't even have Movies set up in our Sidebar. In one case we weren't actually recording a Movie but an overrun of a sporting event. But because that time-slot was in the schedule as a Movie the recording was placed in the Movie folder.

So I wondered what tag or information the system uses to determine if something is a TV Show or a Movie? And is there anyway I can set our system up so that everything goes into TV Shows and never into Movies? Failing that is there a way to re categorise something as a TV Shows from Movies once recorded?

The guide data determines whether an airing is a movie or series/episode/program. This is not something assigned by Channels, but by third-parties.

Not really, no.

Failing that is there a way to re categorise something as a TV Shows from Movies once recorded?

You can move it from your Movies folder into those setup as personal media, and import them as a show. However, this would likely mean you would need to manually assign/edit metadata to each movie.
