Are there any reasons not to run on Windows Beelink server? Seems like the simplest?
no reason at all it is strictly what you feel comfortable with.... I run my main DVR Server on windows because that is my preference.
What RAM would you recommend on the Beelink?
Whatever you can afford the more ram the better.
And do I need a monitor, keyboard and mouse or can I get to the device from my MacBook?
You lost me there not a MAC guy windows/linix yes ... someone else can take that question.
You could plug it into your tv to set it up instead of a monitor. You are going to need a keyboard and mouse to set it up for sure. You will need a keyboard to enter the bios and change the power settings to allow the pc to boot automatically after power loss. Just buy a cheap keyboard mouse combo.
Channels will run on almost nothing, 2-GB is more than enough.
Not for Windows 11 (4GB Minimum, 8GB Recommended)
Good luck running anything in Windows 11 with only 2 GB Ram.
If that is all you want to run but when you start adding Dockers etcc .. the more memory the better.
The standard configuration for the low end Blink N100 mini PCs is 16Gb, that max that Intel officially supports though there are reports that 32-GB will work. The N150 has now replaced the N100 yet there mostly the same with a tiny uptick in clock speed and a better iGPU.
