Would this be a good server?

I am running CDVR and Plex Server on a MacBook M1 but as it is my main computer and I do travel some I would like to get something else to run it on. I was using a Shield but frankly it was kind of a sucky server. Lots of restarts and hang ups.

or would an non-portable or celeron full fledged processor be better?
