I believe it's because those devices are stuck on Fire OS 5.x (Android 7), whereas current models are Fire OS 6.x (Android 9).

Sideloaded apps shouldn't automatically update. Of course, the disadvantage of that is you lose all bug fixes and feature updates.
If you're tied to the Amazon ecosystem, you can get the current model "Lite" stick for $35 or so.

Or perhaps the beta version could be made production or the production version could be rolled back. Hard to believe I am the only one that has this broken and I am including those with gen3 sticks.
Ignoring the suggestion that implies $35 is no big deal. A topic for another discussion in a far away place.
